September 10, 2010

Here are the photos and recipes as promised taken by my trustie iPhone :)

Second night was :: Hamburger Roll an awesome recipe from Evelyn!

photo

Cook up an lb of hamburger meat, throw in some minced onion.
Follow the recipe for biscuits on the Bisquik box.
Roll out the dough on a cookie sheet; sprinkle the hamburger down the middle,
Then fold over the edges of the dough to cover all the meat.
Cook based on the directions for the biscuits.
Heat up some beef gravy.
Slice the Hamburger Roll and cover in gravy…Yum!

Third night was :: Chicken Fajitas from Vedika

photo3

- 1 pkg. McCormick® Fajita Seasoning Mix
- 2 tbsp. oil, divided
- 1 lb. boneless skinless chicken breasts or boneless beef sirloin, cut into ½-inch strips
- 1 medium onion, cut into thin strips
- 1 medium bell pepper, cut into thin strips
- 1/4 cup water
- 8 flour tortillas (6-inch)

Assorted Toppings: Shredded Cheese, Salsa, Sour Cream, Guacamole or Sliced Tomatoes

1. HEAT 1 tablespoon of oil in large skillet on medium-high heat. Add meat; cook and stir 3 minutes or until no longer pink. Remove from skillet.

2. In same skillet, heat remaining 1 tablespoon oil. Add onion and bell pepper; cook and stir 3 to 5 minutes. Return meat to skillet.

3. STIR in water and Seasoning Mix. Cook and stir 3 minutes or until heated through.

4. SPOON into warm tortillas. Serve with toppings, if desire

Night Four was :: Mini Meatloaf from Evelyn D

1) So you startoff by heating the oven to 450 degrees. In a small bowl, stir 1/2 cup of ketchup and 2 tablespoons of packed brown sugar until mixed; reserve 1/4 cup for topping. Then, in a large bowl mix: 1lb lean ground beef (at least 80%), 1/2 lb ground pork, 1/2 cup of Original Bisquick mix, 1/4 teaspoon pepper, 1/4 cup onion, 1 egg, and remaining ketchup/brown sugar mix until well mixed.

2) Spray a 13×9 inch pan with cooking spray. Place meat mixture in pan; pat into 12 x 4 inch rectangle. Cut lengthwise down center and then crosswise into sixths to form 12 loaves (I make mine bigger so its about 6 loaves). Seperate loaves, using spatula, so no edges are touching. Brush loaves with reserved 1/2 cup ketchup mixture.

3) Bake for 18 to 20 minutes or until loaves are no longer pink in the center.

Every single one of these reciepes were AMAZING and I am so thankful for those who sent them in!
